Parmesan Mashed Potatoes

Ingredients
golden potatoes, diced
butter
heavy cream
parmesan cheese, shredded
chopped chives, plus more for garnish
Salt and white pepper to taste
Directions
- Prepare the potatoes by scrubbing them clean.
- Peel and dice the potatoes and place them in a pot of cold, salted water.
- Bring the potatoes to a boil and cook until the potatoes are fork tender, about 20 minutes.
- Remove the potatoes from the heat and drain the hot water from the pot.
- Place the potatoes in a bowl, and mash them using a potato masher or the back of a large wooden spoon.
- Add the butter, cream, chives, and parmesan cheese. Season with salt and white pepper and mix well.
- Garnish with chopped chives and serve immediately.
